In honour of national veg week and meat free Monday, we made a ‘red lentil and barley soup’ ha with a big chunk of ‘white Sourdough bread’ from our local bakery. 10,000 steps to a healthier, fitter you

The magic number is 10,000, huh? Maybe you have heard the recent guidelines about walking 10,000 steps per day and the importance of being active. How far is 10,000 steps anyway? The average person’s stride length is approximately 2.5 feet long. That means it takes just over 2,000 steps to walk one mile, and 10,000 steps is close to 5 miles. Walking can be done almost anywhere, at any time, and in any weather (especially now summer’s on the way). WOW!!! We just came across this amazing idea ‘Refrigeration Without Electricity’. Project Overview: Mobah Rural Horizons, is a Rural Development and Consulting Organization that designs, invents, and disseminates appropriate technologies for poor rural areas. The project is a fresh foods preservation system that uses two clay pots. This system requires no electricity supply to preserve and prolong the storage life of perishable fresh food items. Problem Addressed: For people who live in hot climates with little electricity, food spoils quickly. Produce spoils in within three days without refrigeration, forcing farmers to rush their crops to the market and sell them at undervalued prices. This has a lot of consequences to the farmers, and their families, because it affects their village …

Did you know? Those who prefer to eat locally grown/produced food sometimes call themselves locavores or localvores. This term began circulation around August 2005 in the San Francisco area, when a number of “foodies” launched a website, Locavores.com, after being inspired by the book “Coming Home to Eat” by ecologist Gary Paul Nabham. More recently, an “invasivore” movement has emerged as a subset of the locavore movement, which encourages the consumption of non-indigenous invasive species with the intent of controlling harmful populations. Nutrient-Dense Gazpacho Soup

Gazpacho is a chilled Spanish soup that is very tasty and definitely passes the requirements for vegans and vegetarians. It can be dressed up with some croutons or hot sauce, depending on your taste. This particular Gazpacho soup recipe is nutrient dense and even more so when you adds different types of chopped vegetables…and of course a delicious avocado is always a must! Enjoy!
